Fresh Friday

We decided to try something a little different for Friday. Instead of another discussion question or book-related topic, we thought it'd be fun to have a recipe swap :) Vanessa and I will each post a favorite recipe or maybe something we've always wanted to try. If you decide to try one of our recipes, please let us know and tell us how it turned out! Also, please feel free to post a comment with one of YOUR favorite recipes.

Isalys's Choice:
Tuna Pita Pocket

What You Need:
1 cup chopped cucumber
1 cup chopped tomato
1 can (6 oz.) white tuna in water, drained, flaked
1/4 cup KRAFT Light Ranch Dressing
4 whole wheat pita breads, cut in half
4 large lettuce leaves

Make It!
MIX
cucumber, tomato, tuna and dressing.
LINE
pita bread halves with lettuce; fill with tuna mixture.


Vanessa's Choice:

Philadelphia Orea No-Bake Cheesecake


What You Need:
1 pkg. (1 lb. 2 oz.) OREO Cookies, divided
1/4 cup (1/2 stick) butter, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup sugar
1 tsp. vanilla
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Make It!
COARSELY chop 15 of the cookies; set aside. Finely crush remaining cookies; mix with butter. Press firmly onto bottom of 13x9-inch pan. Refrigerate while preparing filling.

BEAT cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping and chopped cookies. Spoon over crust; cover.

REFRIGERATE 4 hours or until firm. Store leftovers in refrigerator.

  1. OMG, that Oreo cheesecake made me hungry. Fantastic. I don't know so I can only give you my SPECIAL recipe for mac-n-cheese.

    Mac-N-Cheese on-the-go container at Publix $.79 (when on sale)
    Add water to the line (I always add a little extra b/c I like creamy mac-n-cheese)
    Put in microwave 3:30 minutes
    and VOILA! Delicious Mac-N-Cheese!

    Goes well with a glass of Coca-Cola or any refreshment really. Enjoy :D

  3. ZIPLOC Omelettes!!!

    This is a GREAT recipe for “mommies on the go” as well as for sleepover PARTIES!!!


    · Grab a quart sized Ziploc freezer bag and have each child write their name on it.
    · Crack open 2 eggs (large or extra-large) into the Ziploc bag and shake
    to combine them.
    · Put out a variety of ingredients such as: cheese, ham, onions, green
    peppers, tomatoes, etc.
    · Have each child prepare their own bag with their ingredients of choice and shake.
    · Make sure to get the air out of the bag and zip it up.
    · Place the bags into rolling, boiling water for exactly 13 minutes. You
    can usually cook 6-8 omelets in a large pot.
    · Open the bags and the omelet will roll out easily.

    Be prepared for everyone to be amazed!!!

    Imagine having these ready the night before, and putting the bag in
    boiling water while you get ready. And in 13 minutes, you have a nice
    OMELETTE for a quick breakfast!!!

    Orange Brownies:

    This recipe is from a lady in Florida--who was one of the finalists in the Pillsbury Bake-Off years ago---and it's extremely good-

    1 1/2 cups all-purpose flour
    2 cups sugar
    1 teaspoon salt
    1 cup (2 sticks) butter, softened
    4 large eggs
    2 teaspoons pure orange extract
    1 teaspoon grated orange zest

    Glaze: 1 cup confectioners sugar
    2 tablespoons orange juice
    1 teaspoon grated orange zest

    Preheat oven to 350 F. Grease a 13x9x2 inch pan
    Stir together flour, sugar, and salt in a bowl, add butter, eggs, exract, and zest. Using a hand held electric mixer, beat until well blended. Pour batter into prepared pan and bake 30 minutes, or until light golden in color and set. Remove from oven and pierce entire cake with a fork

    For glaze, mix all ingredients together and stir until smooth. Pour glaze over cake. Cool and cut into squares.

  4. oh man that oreo cheesecake looks so good. i have seen it in stores before and never actually made it. i should try it sometime soon.
